No..More...Matzah.....Pleeeeeeeease
I'm sick of Matzah, let it be heard throughout the land. I don't remember being this sick of matzah before. I just know that my BMs (forgive me for mentioning this) are not regular. My tummy feels full, even when I'm hungry. How freaking annoying. And, I really haven't been pigging out on it. I've gone walking the last 3 days in a row to combat feeling like a cow.
Today I meant to go light on matzah. Lunch was Matzah Pizza and an orange. Very basic and easy. Early dinner snack (I won't be eating a full meal, tonight I'll be eating more fruit) was matzah with parmesan.
Matzah Pizza
- 2 sheets of matzah
- canned tomato sauce
- garlic
- pizza seasoning
- cheese
Spread the tomato sauce evenly, sprinkle garlic and seasonings, sprinkle cheese (not too much, Passover is not healthy as it is). Broil for apx. ten minutes or until cheese is melted and edges of matzah brown. It's suprisingly tastey.
Parmesan Grilled Matzah (I came up with this idea today while trying to figure out a new way to enjoy old cardboard matzah.
- Matzah
- Parmesan cheese (kosher l'Pesach of course)
- small amount of butter or margarine
Soak matzah in a light amount of water so that it becomes moist. Place butter in a frying pan and let it melt. Place matzah in the fying pan with the butter. Let sizzle for a minute, then flip over. Sprinkle desired amount of parmesan on top side of matzah. Flip matzah and repeat, and flip. It tastes quite good though it has to be sliced and eaten with a fork.

I am so with you on that! Uh my stomach is blech.
Tomorrow I'm afraid it's matzoh ball soup because I have the matzoh meal and I don't want to waste it.
I'll have to try your pizza reciepe this weekend.

Me too. I'm so sick of matzah and feel like my stomach is becoming one GIANT matzah ball. In the meantime, Little Orieyenta has already eaten two boxes on her own. (Where does this kid put it all?) She loves the matzah pizza and I'll have to try the parmesan recipe along with your brittle recipe. Keep 'em coming. Have a wonderful Shabbat.

Orieyenta: I actually loved to pig out on it as a kid too. Maybe as we get older our digestive systems just don't know what to do with all that white flour goodness.
